Made this for the Faceless Frenzy weekend 2013. I loved the idea of making brownies in a cupcake liner since the plan is to freeze most of them! I used milk chocolate chips and a small handful of mini semi-sweet chips. Even though I cut the recipe in half it yielded 12 cupcakes that were great. Another plus is you’ll nearly always have the ingredients on hand.
Brownies are for me chocolate with a better configuration. Let me explain. It’s like a car. The car you want to buy is great, but you can configure it to bring it to the next level. So the chocolate is the car, and with a mindblowing configuration, you get these super fudgy Brownie Cupcakes. Does that make sense?
How to make WW Brownie Cupcakes:
3⁄4cup all-purpose flour
1⁄2cup brown sugar, plus
1tablespoon brown sugar, firmly packed
3tablespoons unsweetened cocoa
1⁄2teaspoon baking soda
1⁄4cup unsweetened applesauce
1⁄2teaspoon cider vinegar
1 teaspoons butter, melted
1⁄2teaspoon vanilla extract
Heat oven 350. Mix all the dry. Separately mix all the wet. Combine and pour into foil cupcake liners. Bake 18 minutes and let cool. Dust with a bit of powdered sugar.
They are so moist and decadent….you will never buy store bought again.
